4. Bole and fish

Bole and fish is boli with a main course attached. Roasted plantain, grilled fish, and a pepper sauce that can clear your head. Port Harcourt claims the crown, and Lagos does a loud version. This is a meal, not a snack. The fish is often croaker, scored and cooked until the skin blisters. You eat it with your hands, picking flesh off the bone and dragging it through the sauce with plantain. Warn them about bones, and about the sauce.
