17. Abacha
Abacha is African salad, and it is worth the introduction. Shredded cassava is mixed with palm oil, ugba, garden egg, onion, and chilli, then finished with fish if the plate is a proper one. It is tangy, spicy, and crunchy in parts. The East owns it, and Lagos now sells it on plenty of streets. The palm oil is the colour, not a pool of grease. Garden egg adds a bitter note that balances the oil.
