18. Fried yam
Fried yam is the point-and-fry plate. Yam is cut, fried until the outside is golden, and served with pepper sauce, sometimes with egg or fish. Fried plantain works the same way, and many stalls do both. It is the food you order when you are hungry and do not want to decide. The yam should be soft inside and not greasy to the touch. The sauce should be fresh, with onion and pepper you can see.
