13. Small chops

Small chops is the party tray that also lives on the street. A plate might hold puff-puff, samosa, spring roll, and peppered gizzard, with sauce in the middle. It is how you sample without committing to one thing. Order a mix if your guest wants a tour on a single plate. The gizzard is the part that separates a local plate from a generic fried platter. It is chewy, peppered, and usually the first thing to finish.
