19. Moi moi
Moi moi is the calm one. Beans are blended with pepper, oil, and seasoning, then steamed in leaves or foil until the pudding sets. A good one has egg, fish, or corned beef in the middle. It is milder than akara, and very shareable, which makes it a good second plate after something fiery. The texture should be smooth, not grainy. Grainy moi moi was not blended enough. Wrapped in leaves, it looks like a gift. Eat it warm.
